Founded in the 35th year of Meiji. Located in Aizuwakamatsu City, Fukushima Prefecture, 「鰻のえびや」 is a long-established eel cuisine specialty restaurant that has been cherished by many guests in Aizu for over 120 years.
The sixth-generation proprietress, 金坂富巳子, carefully carries on flavors safeguarded through the generations and a spirit of heartfelt hospitality that welcomes each and every guest.
The traditional sun-shade noren hung at the storefront served as a model for the world-renowned printmaker 斎藤清’s 「会津の冬シリーズ」 and is beloved as a symbol that conveys the charm of Aizu to this day.

Aizu-grown organic rice
We use Aizu-grown organic Koshihikari rice sourced directly from contracted farmers.
The rice is milled for each batch and served freshly cooked. Its fluffy sweetness and rich aroma further enhance the exquisite taste of our eel.

Carefully selected eel
We procure eels carefully selected from the finest producing regions for each season.
After firming the eels in pure well water drawn from underground, our artisans meticulously prepare them one by one.
Please enjoy our exceptionally fresh eels, with their natural umami drawn out to the fullest.

We source eels from the most suitable regions for each season, ensuring top-class freshness. After firming the flesh in spring water drawn from an underground well, we quickly fillet them.
Before steaming, we first give them a quick plain grill.
Grilling locks in the eel's natural umami, and steaming finishes it with a fluffy, tender texture.
Dipped in a secret sauce passed down for over 120 years, then grilled fragrantly over binchotan charcoal.
The skin turns crisp and aromatic, while the flesh becomes plump and tender. Please savor the exquisite flavor unique to freshly grilled eel.
